If you’re busy, hungry, and looking to eat something satisfying, the last thing you want to do is spend an hour in the kitchen trying to put together an elaborate meal that will take 30 minutes to eat and then be forgotten by dinnertime. Skip all that hassle and frustration with these 10 recipes so quickly and easily, you'll be eating in no time at all.



1. Sheet Pan Shrimp Fajitas



Light and fresh shrimp fajitas are delicious weeknight meals. If you want to spice things up a little bit, try adding some jalapeños!

Combine shrimp with oil, lime juice, onion, garlic, chili powder, and cumin. Add salt to taste. Stir well then place on a sheet pan or in a foil packet with veggies of your choice (I used bell peppers)

Bake for 20 minutes at 400 degrees Fahrenheit or until cooked through. Serve with tortillas and toppings such as avocado or salsa.


2. Parmesan Crusted Chicken



This recipe is so quick and easy, you can make it on a weeknight. All you need to do is combine the ingredients in a bowl and dip your chicken pieces in the mixture. 

Heat some oil in a frying pan over medium-high heat, then fry the coated chicken for about five minutes or until golden brown. Remove from pan and let cool for at least five minutes before serving.



3. Grilled Shrimp Skewers



It's always a good idea to have some quick and easy recipes on hand. These Grilled Shrimp Skewers are no exception. They're delicious and they come together in just 10 minutes. Plus, you can get them grilled or fried depending on your mood!

  • 1 pound shrimp, peeled and deveined 

  • 1/4 cup soy sauce 

  • 2 cloves garlic, minced 

  • 1 tablespoon honey 

  • 2 tablespoons sriracha 

  • sesame seeds for garnish




4. Poached Egg and Avocado Toast



This toast is healthy and filling for a quick breakfast or post-workout snack. It's also vegan friendly!


  • Toast bread of choice

  • Spread mashed avocado on the bread 

  • Top with a poached egg

  • Garnish with salt and pepper to taste



5. Macaroni and Cheese in a Mug





In a microwave-safe mug or bowl, combine the following: 

1/3 cup of milk (I used whole milk), 

1/2 tablespoon of butter (or margarine), 

and salt to taste. 

Microwave for about 1 minute on high. Add 3 tablespoons of macaroni pasta and cook for an additional minute. Stir in 2 tablespoons of shredded cheese and microwave on high for another 30 seconds until the cheese has melted. Enjoy!


6. Shrimp Stir-Fry



Here's a quick and easy recipe that can be whipped up in just minutes. One of my favorites is shrimp stir-fry. It's healthy and filling, and it can be served with either brown rice or noodles for a complete meal. 

The ingredients are simple- shrimp, garlic, ginger, soy sauce, sesame oil, and red pepper flakes. To make the dish, add them all to a hot pan on the stovetop. Sauté for about five minutes until the shrimp start to turn pink and then add some chopped green onions just before serving


7. Rotisserie Chicken Shepherd’s Pie



  1. Preheat the oven to 350 degrees Fahrenheit. 

  2. Cut the rotisserie chicken into bite-sized pieces and place them in a bowl. 

  3.  Saute onions and garlic with olive oil in a large skillet over medium heat until soft, about 2 minutes. Add carrots and cook for 1 minute more; then add celery and cook for another minute. 

  4. Stir in tomato sauce, salt, pepper, and thyme leaves (optional). Add this mixture to the bowl with the chicken pieces and stir well to combine everything well. 

  5. Place a layer of potatoes on the bottom of your baking dish or casserole dish (not too thin). 


8. Pumpkin Muffins



Preheat oven to 350 degrees F. 

Mix in a large bowl: 1 3/4 cups flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. 

Add the following ingredients and mix until fully incorporated: 1 cup canned pumpkin puree (not pumpkin pie filling), 1 egg, 3/4 cup brown sugar, and 3/4 cup vegetable oil.

Stir in two cups of chopped walnuts or pecans and fold in 2 cups of white chocolate chips (optional). 

Line muffin tins with paper liners or coat them with cooking spray for easy cleanup.


9. Hamburger Steak Casserole



This a quick and easy dish perfect for any night of the week. It has a delicious flavor profile with ground beef seasoned with brown sugar, mustard powder, salt, and pepper; mix with garlic cloves, green onions, and mushroom soup; then topped with cheese and tomato sauce. The finished product is simply phenomenal!

1. Brown ground beef in a skillet over medium-high heat 

2. Add garlic cloves, green onions, and mushrooms 

3. Season meat mixture with brown sugar, mustard powder, salt, and pepper to taste 

4. Add a can of condensed mushroom soup 

5. Pour the meat mixture into the baking dish 

6. Top with cheese and tomato sauce 

7. Bake in the oven at 350 degrees Fahrenheit for 20-25 minutes or until bubbly
